Canh bầu cá trê với thịt cá béo to béo, cắt khúc ướp cùng một sốt gia vị thông dụng cho đậm đà. Đun thật sôi nồi nước rồi thả cá vài nấu gần chín, hớt bỏ bọt, cho bầu cắt nhỏ vào, nêm nếm gia vị. Khi gần nhất xuống thì thêm ít tiêu và hành lá cho thơm.
Cá trê chọn những con to béo nấu canh cá sẽ ngon hơn. Cá sau khi làm sạch thì cắt ra thành những khúc ngắn vừa ăn, ướp với nước màu, hành tím bằm nhuyễn, tiêu, đường, nước mắm ngon và ớt cắt lát trong khoảng 10 phút. Trái bầu đem gọt vỏ, chẻ làm tư, cắt thành từng miếng nhỏ vừa ăn.
Đun nôi 1.5 lít nước rồi trút cá vào nồi. Khi nước sôi lại thì hớt bỏ bọt, cho bầu vào, nấu với lửa nhỏ cho đến khi miếng bầu trong veo. Trước khi tắt bếp thì nêm nếm cho vừa ăn, rắc thêm hành lá cho thơm. Múc canh ra tô và thưởng thức nóng nhé!
